Filipino Style Gai Pad Med Mamuang

Hello friends. Sorry been busy for a while. For today, I decided to write about the dish Gai Pad Med Mamuang a Thai cuisine which is basically stir-fried chicken with cashew nuts. I got the recipe from Appetite magazine and recreate it with available vegetables from the grocery. I love how this recipe turned out. It resembles “chopsuey” (a filipino cuisine) but tasted more sweet.

Here are the tings you’ll need.

Ingredients:

  • 4 Tbs Vegetable oil
  • 1 Cup Chicken fillet (sliced into 1 in pieces)
  • 1 Tbs cornstarch
  • 1 Tbs chopped garlic
  • 1 large onion sliced thinly
  • 2 Bell peppers
  • 1 Cup young corn (sliced diagonally)
  • 1/2 Cup Cashew nuts
  • 1 Cup carrots
  • 1 Cup string beans

For the sauce

  • 3 Tbs Brown sugar
  • 1 Tbs Fish sauce
  • 2 Tbs Oyster sauce
  • 1 Tbs water

To make this. First coat the chicken with the cornstarch and fry in vegetable oil until the chicken becomes light brown in color. Then set aside. Second, to the same pan, saute garlic and onion. Then add the rest of the vegetables (string beans, carrots, bell pepper, young corn). Stir fry in medium heat and then after 3 mins add the chicken.

In a bowl mix all of the ingredients for the sauce (sugar, fish sauce, oyster sauce and water). After mixing add to the vegetables and chicken. Continue mixing for another 3 mins.

Then its ready to be served. I put mine inside bell peppers but you can simply top this to freshly cooked rice.
